My apologies if this is a stupid question, but I don't seem to be finding .DEB packages or a debian repository for vyatta. Does Vyatta only exist in the form of a prepackaged CD install? If yes, why? Is it just a matter of nobody has created packages yet?!? Am I missing something?

debian repository or .deb package

With all due respect, I voted that "you're full of it." :D
There are already package servers for Vyatta. The repository information is preconfigured in the ISO downloads. See the configuration file in your install.
If you already knew about that and there is something extra that you're looking for, put it on the table and we'll definitely consider it.
Doh! I just nuked my debian install for no reason. Bah, I couldn't find
deb http://packages.vyatta.com/vyatta/ stable main # community #
anywhere. All I would have had to do was add that to my sources.list
Thanks Dave.
This is the page I needed http://www.vyatta.org/downloads/glendalebuild
No worries. It should be noted that the stable repository isn't in place yet because Glendale isn't released. It will be created as soon as the final Glendale reaches fruition (very shortly). Right now, if you try to update, you'll get an error.
The history here is because with the Glendale release, we switched from our previous repository to the new one. The idea with the new repository is that everybody should be able to follow along with Vyatta development using either the "stable" or "unstable" repositories, depending on whether they want to operate on the bleeding edge or not. Of course, with a new repository, there really isn't anything "stable" yet, so for now you get the error. Once Glendale is released, that error should be a thing of the past for all future releases because there will always be something stable to point at.
The reason we don't point at VC3 or something like that for now is that the package names and overall system structure changed considerably with Glendale, to the point where we didn't want to handle all the upgrade issues.
